Résumé

Jacky Rigaux, ardent advocate of terroirs, returns to a study of the "climates" of Burgundy, which he defines as "carefully demarcated vineyard parcels each capable of producing a wine with a distinct personality". Aubert de Villaine, for whom a "climate" represents "an alchemy between a place, nature, people and centuries", makes a precious contribution to this work. The text is studded with wise words from winegrowers, all of them concurring with the opinion expressed by Dominique Lafon: "It is important to ask oneself if the liquid in the glass matches the place from where the wine comes."
